1 shallot
1 garlic (finely chopped)
2 slices day old white bread
1 Chicken breast
1 bunch Basil
100 grams Cherry tomatoes
2 tablespoons white balsamic vinegar
2 tablespoons olive oil
salt
freshly ground peppers

Preparation steps

Cut white bread into cubes. Heat 1 tablespoon of olive oil in a pan and saute bread until godlen brown. Drain on paper towels.

Rinse, dry and halve tomatoes. Place into bowl and add garlic. Peel shallot, halve, cut into strips and add to the bowl.

Rinse and pat dry chicken breast, cut into strips. Heat 1 tablespoon of oil in a pan and cook chicken until done. Season with salt and pepper and add to tomatoes. Drizzle with balsamic vinegar, season with salt and pepper. Top salad with bread cubes and garnish with basil leaves. Serve immediately.
