Ingredients

For cherries
150 grams Sweet cherry
1 tablespoon lemon juice
3 tablespoons sugar
200 milliliters Cabbage
1 tablespoon cornstarch
For the panna cotta
4 sheets white gelatin
½ Vanilla bean
3 tablespoons sugar
300 milliliters Whipped cream
In addition
4 centiliters Cherry syrup
2 tablespoons sugar
Cherry sauce

Preparation steps

1.

For the cherries: rinse cherries, set 8 berries aside, halve and pit the rest of cherries.

Combine lemon juice with sugar and cherry juice, bring to a boil. Mix cornstarch with cold water, add to cherry juice and stir until thickens. Remove from heat, add cherries and pour into 4 cold glasses or ramekins. Refrigerate for 2 hours.

For the panna cotta: soak gelatine in cold water.

Slit vanilla pod lengthwise, scrape out seeds and combine with sugar and cream in a pot. Bring to a boil. Squeeze gelatine well, dissolve in hot cream, remove from heat and let cool slightly. Once cream starts to gel, stir well and add to ramekins. Refrigerate for 3 more hours.

Dip reserved cherries in syrup and then in sugar.

Invert desserts onto plates, garnish with cherries and cherry sauce and serve immediately.
