Panna Cotta with Blackberry Sauce
Soak the gelatin in cold water.
Bring the cream with the scraped vanilla beans, vanilla bean and 4 tablespoons sugar to a boil. Remove from heat and dissolve the squeezed gelatin in it while stirring. Cool, stirring occasionally over an ice bath. If the cream begins to gel spoon into glasses. Chill at least 3 hours. To serve, mix the rinsed blackberries with 2 tablespoons sugar and lemon juice and place on the panna cotta.
