Preparation steps

Preheat the oven to 50°C (approximately 125°F). Separate the eggs and refrigerate the egg whites. Mix the flour with the baking powder, milk, honey, and egg yolks. Whisk until smooth and let rest for about 15 minutes. Beat the egg whites with the salt until stiff and fold into the batter. Heat the butter in a nonstick pan, and add a few tablespoons of batter. Cook 1-2 minutes per side until golden brown. Repeat the process until all the batter is used. Keep the pancakes warm in the preheated oven.

Beat the cream with the vanilla sugar until stiff. Stir in the quark, vanilla sugar, and vanilla extract, and mix until smooth.

Serve the pancakes on plates topped with the vanilla cream and drizzled with maple syrup.
