Ingredients

For Pancakes
200 grams Pastry flour
350 milliliters milk
2 eggs
1 tsp sugar
1 pinch salt
50 grams liquid butter
butter (for cooking)
For Filling
6 sheets gelatin
3 lemons (juice of 3, zest of 2)
125 grams sugar
6 egg yolks
100 milliliters white Grape juice
400 Whipped cream
250 grams Strawberries (finely diced)

Preparation steps

Mix all ingredients for pancakes, strain batter through a sieve and let rest for 20 minutes. Heat butter in  a pan and prepare 8-12 thin pancakes. Cool.

Soak gelatin in water. Mix lemon juice with lemon zest, sugar, egg yolks and grape juice and bring to a boil, stirring. Remove from heat and add squeezed gelatine. Strain mixture through a sieve into a bowl and put this bowl into a larger one filled with ice cubes. Stir mixture until it cools completely. Beat cream until stiff and fold into mixture. Add strawberry pieces and refrigerate for 30 minutes. Fill pnacakes with the filling and roll them up. Wrap in aluminum foil and refrigerate for 3 hours. Remove foil before serving.
