1 heaping teaspoon Baking powder
2 tablespoons sugar
2 eggs
250 milliliters milk
1 pinch salt
butter (melted)
vegetable oil (for frying)
300 grams Strawberries
2 tablespoons lemon juice
1 tablespoon honey
Cinnamon sugar

Preparation steps

Rinse strawberries, remove stems, and slice. Marinate the strawberry slices in honey whisked with lemon juice.

Separate the eggs. Beat egg whites until stiff. With an electric hand mixer, mix the egg yolks with 1/3 of the milk, the flour, baking powder, sugar, and salt for 1 to 2 minutes. Mix in the butter. Let rest for 30 minutes. Fold in the egg whites. Heat oil in a small pan and from the batter cook 4 pancakes until golden brown on both sides. Keep warm. Layer each pancake with a few strawberries. Garnish with cinnamon sugar and serve immediately.
