¼ liter milk
2 tablespoons sugar
150 grams Pastry flour
2 tablespoons butter
2 tablespoons raisins
100 milliliters Rum
powdered sugar (for dusting)
200 grams Plum
1 Cinnamon stick
lemon juice
1 packet Vanilla sugar

Preparation steps

For the pancakes, separate eggs. Soak raisins in rum. Mix egg yolks with milk and sugar. Sprinkle with flour and mix until smooth. Drain raisins and fold into batter. Beat egg whites until stiff and fold into batter. Melt butter in a large nonstick skillet and pour in batter. Briefly cook and then use two forks to shred large pancake into pieces. Turn pieces with a spatula and continue cooking until golden. Transfer pancake pieces to a plate and sprinkle with powdered sugar.

Serve pancakes with plum compote.

For the compote, rinse plums, cut in half, remove pits and simmer with cinnamon stick, vanilla sugar, lemon juice and 15approximatelymately 1/2 cup) water for 10 minutes in a pot. Pour into a bowl, remove cinnamon stick and cool.
