Pancakes with Bananas and Berries
Preheat a convection oven to 100°C (approximately 215°F).
Thoroughly mix the flour, sugar, baking powder, vanilla sugar, and salt in a bowl. Stir in the milk until a thick batter has formed. Whisk in the egg. Peel and mash the banana, and add to the batter.
Heat 1 tablespoon of oil in a pan, and ladle the batter into the pan. Cook for 2 minutes on each side. Cook, in batches, until the batter has been used up. Place on a bking sheet and keep warm in the oven.
Stack 3 pancakes on a plate, and garnish with the berries. Serve with jam, if you desire.
