For the pancake batter

Preparation steps

Whisk together milk, vanilla sugar and egg, stir in flour, mix to a smooth dough, let soak 30 minutes. Trim strawberries, rinse, cut into quarters, drizzle with lemon juice. Squeeze oranges. For the sauce, put the sugar in a small pan and melt over very low heat, caramelize while stirring, remove from heat and deglaze with orange juice.

Boil over low heat until syrupy, stir in almond liqueur. Heat 2 tsp butter in a nonstick pan, pour in a ladle of batter, top with 1 taplespoon of almonds and cook over medium heat 4 minutes, turn over and cook for another 3 minutes.

Continue cooking pancakes, keeping warm in the oven. To serve, spread the strawberry mixture on the pancakes, drizzle with syrup, fold pncakes into packets and dust with powdered sugar.
