Beat the eggs, then add the milk. Add the flour, baking powder, sugar, and salt. Mix using an electric mixer for 1-2 minutes. Set aside and let stand for 30 minutes.
Heat the oil in a small pan. Add the batter, in batches, and cook until golden brown on each side.
Place tiny pieces of butter in between the pancakes as you stack them (the heat from the pancakes will melt the butter). Cook all of the pancakes, and repeat the process with the butter. Top with more butter and maple syrup and serve.
