Ingredients

For the dough
125 grams Pastry flour
1 pinch salt
2 eggs
1 tablespoon vegetable oil
¼ liter milk
1 teaspoon Vanilla sugar
For the filling
250 grams Curd
50 grams softened butter
50 grams sugar
2 egg yolks
½ teaspoon grated Lemon peel
5 tablespoons Sour cream
75 grams raisins
3 egg whites
1 packet Vanilla sugar
For the topping
liter milk
1 egg yolk
1 teaspoon sugar
For preparing
100 grams butter
For the garnish
2 tablespoons sugar
½ teaspoon Cinnamon sugar

Preparation steps

1.

For the dough: Gradually whisk together dough ingredients. Covered a let rest for 30 minutes. 

2.

For the filling: Combine butter and sugar. Then stir in yolks, lemon zest, curd, sour cream and rinsed raisins.

3.

Beat egg and vanilla sugar and fold into filling. 

4.

Heat some butter in a frying pan and cook dough in 8 portions, forming pancakes.

5.

Preheat the oven to 180°C (approximately 350°F). Grease a square baking dish with butter.

6.

Spread filling onto pancakes and roll up. Place, seam-side down, in the prepared baking dish. 

7.

For the topping: Whisk together milk, egg yolks and sugar. Pour over pancakes. 

8.

Bake for 30 minutes. Remove, sprinkle with cinnamon sugar and serve.
