Oven Baked S'mores
Mix flour with butter, quark, salt, sugar and gingerbread spices in a bowl and knead with hands into a dough. Shape dough into a ball, wrap in plastic wrap and let rest at least 30 minutes in the refrigerator. Preheat the oven to 200°C (approximately 400°F).
Roll out dough on a floured work surface until 0.5 cm (approximately 1/5 inch) thick, cut into 5 x 8 cm (approximately 2 x 3 inch) rectangles and place on a baking sheet lined with parchment paper. Bake in preheated oven for about 10 minutes, remove from oven and let cool briefly. Meanwhile, chop chocolate. Mix chocolate and cream in a bowl and stir over a hot water bath until chocolate is melted.
Place marshmallows on a baking sheet lined with parchment paper and bake in the oven 5-8 minutes until golden brown. Spread melted chocolate over half of crackers, cover with roasted marshmallows and a second cracker. Serve immediately.
