2 Celery
2 scallions
3 carrots
6 ripe tomatoes
8 ounces white wine

Preparation steps

Rinse the sardines and pat dry with paper towels. Season with salt and pepper.

Rinse the celery, scallions and carrots, peel and finely chop. Rinse the tomatoes in hot water, cut in half and cut into small cubes.

Heat 4 tablespoons of oil in a pan and sauté the vegetables except for the tomatoes over medium heat. Then, pour in the wine and the tomatoes. Boil briefly, then reduce the heat and simmer while covered for 2-3 minutes. Season with salt and pepper. Place the sardines in an ovenproof dish and pour in the marinade. Preheat the oven to 200°C (approximately 400°F). Cover the dish with aluminum foil and cook the sardines in the hot oven for about 15-20 minutes. Serve with fresh white bread and 1 glass of white wine.
