Split the shells of the chestnuts and boil for around 30 minutes until soft. Drain, leave to cool, then peel completely.
Chop the chestnuts finely in a mixer then transfer to a bowl and add the honey, 120 g palm sugar, the rum and 1 tsp cinnamon. Knead the mixture to a firm dough which holds its shape. Roll out on a floured work surface to a thickness of 1-1.5 cm and cut out circles (approx. 3 cm in diameter).
Line a baking tray with grease-proof paper and place the sweets on the tray. Finely grind the remaining palm sugar with the cinnamon and sprinkle over the sweets. Leave to dry for at least 5 hours before serving.
