Orange Shrimp Cocktail with Lettuce
Rinse the batavia and lamb's lettuce, and spin dry. Rinse the tomatoes, quarter, core and cut into cubes. Peel and slice the cucumber. Mix the salads together and transfer to plates. Peel the orange, cut into wedges and slice. Rinse the shrimp and drain well.
In a bowl, whisk together the honey, orange juice, mustard, vinegar and olive oil and season with salt and pepper. In a bowl, toss the shrimp with the oranges, add the honey mixture and toss to combine. Serve shrimp cocktail on a bed of lettuce and sprinkle with dill.
