For the dough
200 grams Pastry flour
1 pinch Salt
100 grams Butter
100 grams Sugar
1 Organic orange (zested)
1 teaspoon Cinnamon
1 Egg
Additional ingredients
600 grams Strawberries
200 grams Whipping cream
Vanilla beans
1 teaspoon Sugar
4 Mint sprigs
1 teaspoon Powdered sugar

Preparation steps

Step 1/3

Place the flour, sugar, cinnamon, salt and orange zest in a bowl. Cut the butter into small pieces and mix all the ingredients together with your fingers to create a streusel. Finally add the egg and knead everything together quickly into a smooth dough. Roll into ball, wrap in plastic wrap and place in the refrigerator for about 1 hour. Then place the dough between 2 sheets of parchment paper, roll out thinly and cut into 8 circles. Line a baking sheet with parchment paper and place the dough circles on top. Bake in an oven preheated to 180°C (approximately 350°F) for about 15 minutes. Remove and let cool.

Step 2/3

Rinse the strawberries and pat dry. Beat the cream until stiff, stirring in 1 teaspoon sugar and vanilla bean seeds towards the end of beating.

Step 3/3

Cut half of the strawberries into pieces. Spoon the whipped cream into a pastry bag fitted with large star tip and pipe cream onto 4 cookies and spread the strawberries on top. Place the remaining cookies on top, garnish with the remaining cream and top with the remaining strawberries. Garnish with mint leaves and sprinkle with powdered sugar.
