For the cakes
200 grams Pastry flour
50 grams ground almonds
125 grams softened butter
100 grams sugar
4 eggs
1 pinch salt
2 teaspoons Baking powder
150 milliliters milk
For the orange sauce
6 organic Oranges (juiced)
Grand Marnier
1 teaspoon Bourbon vanilla
Orange peel (from 2 organic oranges)

Preparation steps

For the cakes: Cream the butter and sugar until fluffy. Stir in the eggs and salt until creamy. Combine the flour, baking powder and ground almonds and mix into the batter alternately with the milk. Grease 12 small ramekins and dust with flour. Fill with the bake, arrange on a baking sheet and bake in a preheated oven (160°C) (approximately 325°F) until golden brown, around 30 minutes. Immediately remove the cakes from the ramekins and sprinkle with 1 teaspoon Grand Marnier.

For the orange sauce: Heat the orange juice, 3 tablespoons Grand Marnier and 4 tablespoons sugar, stirring, until the sugar dissolves. Strain through a fine-mesh sieve into a clean saucepan. Add the vanilla and orange zest, bring to a boil then remove from the heat.

Spoon some orange sauce onto serving plates and arrange the cakes in the sauce. Drizzle with more orange sauce and serve lukewarm.
