Onion and Salami Potato Cake

Preheat oven to 350ºF / 180°C fan.
Blanch sliced potatoes in boiling salted water for 3 to 4 minutes; drain well.
Brush the bottom of a casserole dish with melted butter. Layer 1/3 of the sliced potatoes in the bottom of the baking dish. Brush the potatoes with butter and season to taste with salt and pepper. Arrange half of the onions in a layer over the potatoes, followed by half of the parsley and half of the salami. Repeat the process starting with sliced potatoes brushed with butter and ending with a layer of potatoes. Season with salt and pepper and brush with the last of the butter.
Bake for 45 to 60 minutes, or until cooked through and golden brown. Garnish with fresh parsley. Slice and serve.
