For the omelets
4 eggs
salt
1 Lime (finely grated)
1 Tbsp sugar
For the filling
300 grams Raspberries
To serve
50 grams butter
2 Tbsps powdered sugar

Preparation steps

For the omelets, separate the eggs. Beat the egg whites with a pinch of salt and the lime zest and dust with the sugar. Whisk the egg yolks and gently fold into the egg whites with the whisk.

Fry 2 tablespoons of the egg mixture in some hot butter in a nonstick pan over medium heat. Flip the omelet over, put the lid on the pan, remove from the stove and leave to rest for about 10 minutes. Transfer the omelet to a plate, gently fold in half and keep warm while cooking the rest of the omelets.

3.

For the filling, open the omelets slightly and shower with raspberries.

To serve, fold over again and serve dusted with powdered sugar.
