Preparation steps

Preheat the oven to 220°C (approximately 430°F).

Separate the eggs, and beat the egg whites until semi-stiff. Beat the yolks and the cream together, then add the egg whites.

Cut the ham into pieces. Sauté 1/4 of the ham in 1 tablespoon of hot butter. Add 1/4 of the egg mixture to the pan, and season with salt and pepper. Sprinkle with cheese, and place in the oven. Cook for 5 minutes, until browned slightly. This recipe will make enough for 4 omelettes. Remove from the oven and serve.
