Pastry flour (for the work surface)
Parchment paper (for the baking sheet)

Preparation steps

1.

Mix the flour, salt, ground walnuts and oatmeal on the work surface. Add the powdered sugar, egg and chopped butter. Quickly knead into a smooth dough. If the dough is too dry, knead in the cold cream. Wrap in plastic and chill for 30 minutes.

2.

Preheat the oven to 175°C (approximately 350°F). Line the baking sheet with parchment paper. Roll the dough onto a floured surface to approximately 3-4 mm thick. Cut out 3 cm circles and place on the baking sheets. Bake for about 8-10 minutes, until light golden. Remove from the oven and cool on a wire rack.

3.

Mix the powdered sugar and 1-2 tablespoons of water until thick. Coat half of the cookies with the icing. Coat the other half with the jam. Sandwich cookies, placing iced cookies on top of jam. Garnish cookies with walnuts and serve.
