Ingredients

For the base and the crumble

Preparation steps

1.
Mix together the biscuits crumbs, nuts, cinnamon, sugar and melted butter. Place half the mixture inside a cake tin. Press down firmly and evenly and chill in the fridge. Chill the remaining mixture as well.

To make the filling, soften the gelatine in cold water. Mix together the cream cheese with the quark, sugar and mincemeat until smooth. Heat the rum gently and wring out the gelatine. Dissolve the gelatine in the rum and stir in 2 tbsp of the cheese mixture.
3.
Add the mixture to cheese mixture and stir in quickly. Fold in the whipped cream and spread the mixture onto the base.
4.
Crumble the remaining biscuit mixture and sprinkle it on top of the filling. Chill for at least 3 hours, then remove the ring and serve. If desired garnish with fresh redcurrants.
