Heat the oven to 160°C (140° fan) 325°F gas 3. Line a large baking tray with non-stick baking paper.
Grind 200g|1 cup nuts and the icing sugar together in a food processor until finely ground.
Whisk the egg whites with the salt until stiff. Stir in the nut mixture with the vanilla and remaining chopped nuts.
Spoon (or pipe) small rounds, abou t2-3 cm|1" in diameter on the baking tray and bake for 10-20 minutes, until very light brown. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
