For the cupcakes
1.333 cups plain flour
2 tsps Baking powder
½ cup caster sugar
½ tsp salt
¾ cup chopped dried Apricot
cup Whole milk
0.333 cup Cottage cheese
cup sunflower oil
1 medium egg
To decorate
½ cup Apricot Jam
2 cups powdered sugar (sifted)
12 sliced almonds
4 fresh Apricot cut into slivers (optional)

Preparation steps

1.
Preheat oven to 200°C (180° fan) | 400F | gas 6. Place 12 paper cases in a 12-hole cupcake tin.
2.
Mix the flour, baking powder, salt, and sugar together in a mixing bowl. In a small bowl mix the milk, cottage cheese, oil and egg together.
3.
Stir the wet ingredients into the dry together with the apricots. Stir until just combined.
4.
Spoon the mixture into the cases and bake for 20 minutes until golden and risen.
5.
Leave in the tins until cold, and then place on a wire rack.
6.
To decorate, mix the apricot jam (jelly) with a little icing sugar and a little water. Keep adding water until dropping consistency is reached.
7.
Drizzle a little on each cake and decorate with the flaked (slivered) almonds and a little sliver of fresh apricot (optional).
