Preparation steps

Preheat the convection oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper.

Pour the ingredients for the dough into a mixing bowl and process with the dough hook of an electric hand mixer to form a smooth dough. Roll on a floured surface to make a roll about 60 cm (approximately 24 inches) long. Cut into 30 pieces, each about 2 cm (approximately 1 inch) thick.

Cut the nougat into 60 small cubes and roll into balls. Press the dough slices slightly flat, place a nougat cube on each and shape into balls around the filling. Distribute on the baking sheet, leaving a little distance between each. Bake on the middle shelf in the preheated oven until golden brown, 10-15 minutes. Remove from the oven and let cool.

For the decoration, chop the chocolate coarsely and melt over a hot water bath. Place a dab of chocolate on each cookie. Press the walnuts on the chocolate and allow to solidify.

Pour the sugar into a small saucepan and caramelize until honey-colored over medium heat. Allow to cool slightly. Using a small spoon, drizzle the cookies with the caramel and form threads. Let cool completely, then serve.
