For the cake batter
60 grams dark Couverture
4 eggs
100 grams butter (softened)
80 grams sugar
½ Vanilla bean
75 grams ground almonds
50 grams ground Hazelnuts
75 grams Pastry flour
50 milliliters milk
1 pinch salt
50 grams powdered sugar
For decoration
100 grams Almond slivers
125 grams dark Couverture
75 milliliters milk
75 milliliters Whipped cream
100 grams chocolate hazelnut spread

Preparation steps

Preheat oven to 180°C (approximately 350°F).

For the cake batter, chop chocolate and melt in a heatproof bowl set over a pan of hot (not boiling) water. Let chocolate cool down. Separate eggs.

Halve vanilla bean lengthwise and scrape out seeds with a sharp knife. Beat butter with sugar and vanilla bean seeds until fluffy. Gradually add egg yolks to butter mixture and stir in chocolate. Mix almonds and hazelnuts and stir into butter mixture alternately with the flour.

Beat egg whites with a pinch of salt until stiff. Sprinkle powdered sugar into egg whites and gradually fold into batter. Pour batter into greased pan and bake until cake tests done with a toothpick, about 50 minutes.

Let cake cool briefly in pan, then carefully remove from pan and cool completely on a wire rack.

Spike cake with slivered almonds.

For decoration, chop chocolate and mix with milk, cream and Nutella. Bring to a boil while stirring to melt chocolate, and cool to lukewarm. Pour chocolate glaze over cake and let stand one day.

Cut cake into slices to serve.
