For the rolls
1 cube Yeast
250 milliliters
2 eggs
500 grams Pastry flour
50 grams butter
50 grams sugar
½ teaspoon salt
150 grams Marzipan
150 grams ground Hazelnuts
½ teaspoon ground cinnamon
1 tablespoon Rum (or milk)
For garnish, if desired

Preparation steps

1.

For the rolls, dissolve yeast in 3-4 tablespoons milk, then pour in the remaining milk. Separate the eggs.

Place flour in a bowl. Add yeast milk, butter, sugar, salt and egg yolks and knead to a smooth dough. Cover and let stand in the refrigerator overnight.

For the filling, mix marzipan, nuts, cinnamon, rum and egg whites.

Roll out the dough and spread the filling over the dough. Roll tightly, cut into 25 slices and let them rise on a baking sheet lined with parchment paper for 20 minutes.

Bake in preheated oven at 220°C (fan 200°C; gas mark 3-4) (approximately 425°F/convection 400°F) for 15-18 minutes. Garnish with sanding sugar and serve warm.
