2 tablespoons Pastry flour
2 eggs
50 grams breadcrumbs
50 grams ground Hazelnuts
4 Veal cutlets each about 120 grams (from the loin)
salt
freshly ground peppers
3 tablespoons clarified butter
1 garlic
1 sprig rosemary
1 sprig thyme

Preparation steps

1.

Place flour, eggs and breadcrumbs mixed with hazelnuts into separate paltes. Whisk eggs. 

2.

Rinse meat, pat dry and flatten, if necessary. Season on both sides with salt and pepper. Coat with flour, dip into eggs and coat with breadcrumbs, pressing gently. Heat butter in a pan and add herbs and garlic to the pan, cook cutlets for about 5 minutes per side or until golden brown. Baste with butter often.

Drain on paper towels. Arrange on plates and serve.
