6 ounces ground Hazelnuts
7 ounces softened butter
7 tablespoons powdered sugar
2 egg yolks
1 pinch Mace (or nutmeg)
1 pinch cinnamon
6 ounces Pastry flour
4 tablespoons chocolate-nut spread (more as needed)
4 ounces Dark couverture chocolate
1 teaspoon vegetable oil
Pastry flour (for work surface)

Preparation steps

Toast nuts in a dry frying pan. Mix butter, powdered sugar, egg yolks and spices until frothy. Add flour and knead in cooled nuts. Once smooth, wrap in plastic wrap and refrigerate for 30 minutes.

Preheat oven to 350°F. Line baking sheets with baking paper. Roll out dough on a floured surface approximately 1/10 inch thick. Use a cookie cutter to cut out cookies approximately 1-inch diameter. Place on trays and bake for 10 minutes. Remove from sheets using baking paper and cool.

Spread half of cookies with filling and top with empty cookies. Melt chocolate with oil over a hot water bath and dip cookies on both sides, leaving middle section plain. Dry on baking paper and serve.
