¼ l cold milk
500 grams Pastry flour
50 grams butter
50 grams sugar
½ tsp salt
2 egg yolks
220 grams butter
40 grams Pastry flour
1 egg yolk (for egg wash)

150 grams Marzipan
90 grams toasted, chopped Nut
½ tsp cinnamon
70 grams raisins
2 centiliters Rum
2 egg whites

Preparation steps

For the puff pastry: In a bowl, dissolve the yeast with 3-4 tablespoons of cold milk. Stir in the remaining milk. Sift the flour into a separate bowl. Beat in the milk mixture, softened butter, sugar, salt and egg yolks until a smooth dough is formed. Cover with aluminum foil and chill in the refrigerator over night.

Preheat the oven to 220°C (approximately 425°F).

Knead the remaining butter and flour together into a smooth dough. Roll the butter-flour mixture on a lightly floured surface until 20 x 30 cm (approximately 8 x 12 inches) in size. Roll the rested dough to 32 x 42 cm (approximately 12 1/2 x 16 1/2 inches) in size. Place the butter-flour dough on 1 half of the other dough and brush the edges with egg wash. Fold the second half over the butter-flour dough. Press the edges to seal.

For the filling: In a bowl, combine the marzipan with the chopped nuts, cinnamon, raisins, rum and egg.

Roll out the puff pastry to a very large rectangle. Spread the filling over the dough and roll up as with cinnamon rolls. Cut into 25 slices and place on the baking sheet with some distance between them. Rest for 20 minutes. Brush with egg wash and bake for 15-18 minutes.

Serve dusted with powdered sugar.
