- ½ cup Almond flour
- 2 cups 2% milk
- 2 cups canned Apricot (in juice)
- ½ cup crushed Ice
- ½ cup sliced almonds
- Ginger biscuit (to serve)
Preparation

Combine the ground almonds and milk in a food processor or blender. Leave to soak for 5 minutes.

Add the apricots and their juice as well as the crushed ice. Blend on high for 2 minutes until smooth.

Pour into glasses, garnish with flaked almonds, and serve with the biscuits on the side.
