New Potatoes with Herbed Quark

Rinse the potatoes, place in a large pot and cover with water. Boil for about 30 minutes, until tender. Whisk the quark and milk together until smooth. Rinse the scallions and finely chop the white portion only. Rinse and coarsely chop the radishes. Peel and mince the garlic. Rinse the parsley and chives and chop finely. Stir the radishes, scallions, garlic, parsley and chives into the quark and mix well.
Drain the potatoes and season with salt and pepper. Plate the potatoes with a spoonful of the herbed quark and garnish with cress.
