2 Nectarine (peeled, pitted and chopped)
1 cup sparkling Rosé
1 egg white
0.333 cup powdered sugar

Preparation steps

1.

Place the sugar and lemon juice in a pot with 3 ounces water and bring to the boil. Stir until the sugar has dissolved. Remove from the heat and leave to cool.

Purée the watermelon and the nectarines in a blender with around half the sparkling wine.

Add the purée to the sugar syrup along with the remaining wine and mix well.
4.
Beat the egg white until stiff and gradually stir in the icing sugar. Fold into the fruit mixture and then transfer to an ice cream maker. Alternatively place the mixture in a shallow container and freeze for at least 3 hours, stirring well with a fork every 30 minutes.
