1 Sieve, 1 Cutting board, 1 Small knife, 1 Small pot, 2 Bowls, 1 Whisk, 1 Wooden spoon, 1 Baking sheet, 1 Parchment paper, 1 Offset spatula, 1 Tea strainer

Preparation steps

Rinse nectarines and currants and drain well in a sieve.

Halve nectarines, remove pits and cut into wedges. Prick currants with the tines of a fork.

Melt butter in a small pot and let cool slightly.

Mix yogurt, eggs, sugar and vanilla sugar in a bowl with a whisk. Add melted butter and stir briefly.

Place pastry flour, semolina flour and baking powder in a bowl, mix well and stir into the yogurt mixture.

Line a baking sheet with parchment paper and spread the batter onto the parchment with an offset spatula. Top with nectarines and currants and bake in preheated oven at 180°C (fan 160°C, gas mark 2-3) (approximately 350°F/convection 325°F) on the middle rack for about 25 minutes.

Place powdered sugar in a tea strainer and sprinkle the cake with sugar to taste. Serve lukewarm or at room temperature.
