1 Green cabbage 1 kg (approximately 2 pounds)
200 milliliters white wine
100 milliliters fish stock
4 Tbsps olive oil
salt
peppers (from the mill)
8 Herring
4 Tbsps whole-grain Mustard
1 Tbsp honey
50 milliliters Orange juice
1 tsp dried thyme

Preparation steps

Preheat the oven to 180° C (350° F) top and bottom heat.

Rinse the cabbage and cut or slice into thin strips. Divide the cabbage equally between four ovenproof dishes. In a small bowl, whisk together the white wine and fish stock and pour 1/4 of the mixture over each of the cabbage dishes. Drizzle the olive oil evenly over each dish. Season with salt and pepper. Place all 4 dishes in the oven and cook for about 20 minutes, stirring a few times. As needed, add additional water.

Rinse the herring fillets, pat dry, and cut in half. In a small bowl,whisk tohgether the mustard, honey, and orange juice.

Remove the cabbage dishes from the oven and sprinkle with the thyme. Season the fish fillets on both sides lightly with salt and pepper and brush with the mustard. Place the fish on top of the cabbage, return to the oven, and bake for another 10 more minutes. Season to taste and serve.
