Preparation steps

In a small bowl, crumble the yeast into 3 tablespoons of lukewarm water. In the bowl of an electric mixer, mix flour with semolina and salt, make a well in the center and pour in the yeast mixture. Add 180 ml (approximately 6 1/4 ounces) of lukewarm water  and knead with a dough hook into a smooth dough. Cover and let rise 45 minutes.

Meanwhile,  clean and slice the mushrooms. Peel and chop the shallot and garlic.

Preheat the oven to 220°C (approximately 425°F). Line 4 baking sheets with parchment paper. Drain the artichoke hearts. Divide the dough into 4 pieces and roll out on a floured surface into 26 cm (approximately 10-inch) circles. Place on the baking sheets and spread very thinly with the puree, sprinkle with shallots and garlic and top with salami, mushrooms and artichoke hearts. Bake 2 pizzas at a time until the crusts are crisp and the topping is piping hot, 10-15 minutes each.
