- 400 grams button Mushroom
- 400 grams Cherry tomatoes
- 1 bunch curly parsley
- Dressing
- 1 garlic clove
- 200 grams Natural yogurt
- ½ organic lemon (juice)
- 2 Tbsps chopped Fresh herbs (as desired)

- freshly ground peppers
Preparation

Rinse, trim and thinly slice scallions crosswise. Wipe mushrooms clean with a paper towel and slice thinly. Rinse and slice cherry tomatoes. Rinse parsley, shake dry and strip leaves from stems. Mix all ingredients together and divide salad among plates.

If desired, serve salad with a creamy yogurt dressing. To make: Peel and finely chop garlic and mix with yogurt, lemon juice and fresh herbs. Season with salt and pepper.
