36 Mini Marshmallow
250 grams Pastry flour
1 packet Vanilla sugar
2 teaspoons Baking powder
½ teaspoon baking soda
1 egg
80 milliliters sunflower oil
4 tablespoons sugar
225 milliliters Buttermilk
For decoration
100 grams Mascarpone
2 tablespoons powdered sugar
For the muffin tin
1 Baking sheet (muffin tin with 12 cups)

Preparation steps

For the muffin tin: Grease the muffin tin and chill for 30 minutes.

For the muffins: Place the flour, vanilla sugar, baking powder and baking soda in a bowl and stir to combine.

In another bowl, whisk the egg. Stir in the marshmallows, oil, sugar and buttermilk. Stir in the flour mixture until thoroughly combined.

Divide the batter between the muffin cups. Bake on the center rack of a 180°C (approximately 350°F) oven for 15 minutes. Remove from oven and let cool for a few minutes. Remove and cool completely on wire rack.

For decoration: Cut the muffins in half horizontally. Cut 12 small waffle pieces for the muffin garnish. In a bowl, mix the mascarpone with the powdered sugar until smooth and creamy. Fold in the remaining crushed waffle pieces. Spread the cream between the muffins and sandwich together. Spread some cream on top of the muffins. Garnish with the waffle pieces and serve.
