Preparation steps

1.

Rinse orange with hot water, pat dry, finely grate zest and squeeze juice. Cut marzipan and dried apricots into small cubes and puree with orange juice. Stir in chopped nuts.

Preheat oven to 180°C (approximately 350°F). Line a muffin tin with baking cups. Whisk flour with baking powder. Whisk sugar with eggs, oil, orange zest, and buttermilk. Stir in flour mixture. Pour half of the batter into baking cups. Divide apricot and nut mixture over muffins and fill with remaining batter. Bake 20-25 minutes. Remove muffins from oven. Remove muffins from tin and transfer to a wire rack to cool.
