Chop the nuts coarsely and toast together with the 8-grain granola in a pan. Melt the nougat in a water bath.
Caramelize the butter, sugar and honey, stirring constantly. Stir in the nougat and nut mixture.
Spread the mixture on wafer sheets and cover each with another wafer sheet. Weigh down with a wooden board and leave to set.
Cut into pieces or strips before serving.
