Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). Line a baking sheet with parchment paper. 

2.

Roll the puff pastry out to about 3-4 mm (approximately 1/10-1/8 inch) thin and 20 cm (approximately 8 inches) wide. Separate the egg and brush the puff pastry with the beaten egg white.

Combine the rolled oats with the brown sugar and melted butter and spread over the puff pastry. Roll the long sides of the dough inward until they meet in the middle. Slice the roll into 1.5 cm (approximately 1/2 inch) thick slices and place onto the prepared baking sheet.

Whisk the egg yolk with the heavy cream and brush onto the puff pastry slices. Bake for 20 minutes. 

5.

Remove from the oven and cool on a wire rack.
