- For the cakes
- 6 ounces butter
- 6 ounces sugar
- 2 eggs
- 10 ounces Pastry flour
- 2 teaspoons Baking powder
- 5 ounces milk
- 1 tablespoon lemon juice
- butter (for greasing)
- 4 small Marshmallow
- 1 teaspoon melted, dark Chocolate
- Pastry flour (for dusting)
Preheat oven to 350°F.
For the cakes, beat butter and sugar until creamy. Gradually stir in eggs. Mix flour with baking powder and stir into egg mixture, alternating with milk. Add lemon juice and mix.
Pour batter into 4 buttered ramekins dusted with flour and bake for 30 minutes. Cakes are done when a toothpick inserted in center comes out clean.
Remove, cool slightly, remove from ramekins and cool completely.
For the frosting, mix butter until creamy with sugar. Stir in cream cheese and add powdered sugar until frosting reaches desired consistency. Color with food coloring as desired.
Place frosting in a piping bag with a jagged spout and decorate cakes with frosting to resemble hair. Cut marshmallows in half, paint a small circle in center with chocolate and place on cakes to resemble eyes. Serve.
