For the cookies
4 cold egg whites
1 teaspoon lemon juice
250 grams sugar
1 tablespoon cold Mocha bean
250 grams ground almonds
1 tablespoon Mocha powder (instant)
For decoration
1 tablespoon mocha liqueur
100 grams powdered sugar
50 Mocha bean

Preparation steps


For the cookies: Preheat a convection oven to 120°C (approximately 250°F). Line a baking sheet with parchment paper.


In a bowl, beat the egg whites with the lemon juice until stiff. Continue beating, addein the sugar 1 spoonful at a time, until very stiff and glossy. In another bowl, stir the mocha with the ground almonds and mocha powder. Gently fold into the egg white mixture. Place the mixture into a piping bag with large round tip. Pipe 2-3 cm (approximately 3/4-1 1/8 inch) diameter circles on a parchment-lined baking sheet. Bake until dry, about 30-40 minutes. The cookies should be dry on the outside, but moist on the inside. Remove the cookies from the oven, remove the parchment paper and cookies from the baking sheet, and allow to cool completely on a wire rack.

For decoration: In bowl, stir the mocha liqueur with the powdered sugar until smooth. Place in a freezer bag and cut a corner. Pipe the mocha glaze onto the cookies. Garnish each with 1 mocha bean and allow to dry.
