Mixed Stone Fruit Chutney

1 Pot, 1 Small pot, 1 Bowl, 1 Small bowl, 1 Small plate, 1 Measuring cups, 1 Butter knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Cup, 1 Plastic wrap, 1 Whisk
Put the apricots, prunes, water, vanilla pod and cinnamon stick into a bowl. Cover and leave to soak for 2 hours.
Strain the liquid into a large pan. Chop the apricots and prunes and add to the pan with the vanilla pod, cinnamon stick, lemon juice and sugar.
Heat gently until the sugar has dissolved. Bring to a boil, then reduce the heat and simmer gently until the fruit is just tender. Remove the vanilla pod and cinnamon.
Spoon into hot sterilised jars. Cover, seal and label.
