With the mixed salad you can save some calories - so this dish is suitable either as a light lunch or dinner or as a fresh vegetable side dish to a hearty meal. The mushrooms provide various B vitamins, which ensure a good memory, a good night's sleep and a balanced mood.
The mixed salad goes well with a satiating side dish of wholemeal baguette, flat bread or classic sourdough bread, for example with a cheese topping. The salad can be made even richer with feta, olives or nuts.
- 300 grams mixed Lettuce (such as romaine lettuce, radicchio, lollo rosso, frisee, or arugula)
- 1 red onion
- 150 grams button Mushroom
- 6 Radish
- 1 red Apple
- 3 Bell pepper (red, yellow, green)
- 4 scallions
- 5 tablespoons olive oil
- 3 tablespoons light balsamic vinegar

Separate the leaves of the lettuce. Rinse, trim, spin dry, and tear into small pieces. Peel and thinly slice the onion. Clean the mushrooms, wipe with a paper towel, and slice. Rinse, trim, and thinly slice the radishes.
Rinse the apples, remove the core, quarter, and thinly slice. Rinse the peppers, halve, and remove the seeds and membranes. Thinly slice the peppers. Rinse, trim, and thinly slice the scallions.
Mix the oil with the vinegar and season with salt and pepper.
Toss all the salad ingredients with the vinaigrette, transfer to a bowl, and serve.
