Place the sugar, water and cherry brandy in a large, heavy-based saucepan. Bring to a simmer, stirring occasionally, over a moderate heat until the sugar has dissolved.
Continue to simmer for 2-3 minutes, then remove from the heat and allow to cool. Arrange the apricots in the base of a large, sterile glass jar.
Follow with the grapes and gooseberries, then the strawberries and plums. Place the pear on top, then the cherries.
Once the sugar syrup is cool, pour over the fruit. Lay the peach slices and redcurrants on top and serve.
