- 2 ozs Arugula
- 1 small Red onion (thinly sliced)
- 8 ozs white button Mushroom (thinly sliced)
- For the dressing
- 2 Tbsps Red wine vinegar
- 2 Tbsps lemon juice
- 1 clove garlic cloves (crushed)
- 2 tsps sugar
- 1 tsp salt
- ½ tsp freshly ground Black pepper
- 8 Tbsps extra virgin olive oil
Preparation

Put all the salad ingredients into a salad bowl.

For the dressing: whisk together all the ingredients and pour over the salad. Toss gently to mix.
