Mixed Berry and Soft Cheese Pudding

Variation: Autumn mascarpone gratin: replace the summer fruits by the same quantity of a mix of apples, pears and cooked chestnuts
Butter a 20 cm round pan with some of the butter.
Sprinkle a tablespoon of sugar over the summer fruits in a mixing bowl. Set aside.
Pre-heat the oven at 180°C | 350F | gas 4.
In a small saucepan over very low heat, melt the butter, then remove from the heat. Add the sugar and mix until blended.
Add the two eggs, mix again, then add the mascarpone. Finish mixing with 60 g of flour and a tablespoon of framboise.
Place the fruits in the dish then spread the cream over the fruit.
Bake for 25 minutes then let cool and serve with vanilla ice cream.
