Preparation steps

For the dough: combine pastry flour, powdered sugar, almonds and butter in a bowl, mix with dough attachment of a mixer. Add egg and 2-3 tablespoons of cold water. Quickly knead with hands until smooth dough forms. Shape into a ball, wrap in plastic wrap and refrigerate for at least 2 hours.

Butter 4 tart ramekins.

Divide dough into 4 equal portions. Roll out each portion on a floured surface to a circle slightly larger than ramekins. Line ramekins with dough, making an edge all around. Refrigerate for 20 minutes.

Rinse Mirabelle plums, halve and pit. Arrange plums in tarts, baste with butter and sprinkle with brown sugar. Bake in preheated oven at 200°C (approximately 400°F) for about 25 minutes. Allow to cool slightly, remove from ramekins and transfer to wire rack. Sprinkle with grated chocolate and serve.
