Mirabelle plums are packed with plenty of beta-carotene, a precursor of vitamin A. This fat-soluble vitamin helps support eye health, among other benefits. 

If you like, you can always enjoy these pancakes with other fruits. Plums, apples or pears are all delicious in this recipe.

7 ounces Pastry flour
½ teaspoon Baking powder
13 ounces milk
½ teaspoon salt
5 eggs
7 ounces Mirabelle plum
2 tablespoons butter
Jam (to taste)

Preparation steps

1.

Combine the flour, baking powder, milk, salt and eggs and stir until smooth. Let the batter rest for 15 minutes. Rinse the plums, pat dry, cut in half, remove the pits and cut into pieces.

Heat the butter in a nonstick frying pan and cook small pancakes for 2-3 minutes on each side, using pancake rings if desired. Place some plum pieces on each pancake before flipping. Repeat until all of the batter is used up.

Serve the pancakes warm topped with jam.
